I can’t take credit for this recipe. It’s the Momfessionals Chicken Pot Pie recipe, but made a little easier and with biscuits instead of pie crust. I absolutely LOVE her original recipe, but I wanted to find a way to make it a little more quickly on a weeknight. Here’s my version. I hope you enjoy it!
1 rotisserie chicken (meat removed & diced)
2 cups of frozen diced potatoes (I buy the container that has the chopped onion already in it)
2 cups of frozen sliced carrots
1 cup of frozen corn
1 cup of frozen peas
2 sticks of butter
1 cup flour
1.5 cups milk
3.5 cups chicken broth (approx one carton)
Slap Your Mama Seasoning (I love this instead of salt & pepper alone, but you can do that too!)
1 pack of refrigerated flaky crust biscuits
Preheat the oven to 350 and cook the biscuits according to the package directions. In one large pot I boil all of the vegetables together for about 5 min, so that they are tender, but not fully cooked. Drain and set aside. In the same pot, melt the butter, then add the flour, milk and 3 cups of chicken broth. Reserve a 1/2 cup of broth…you’ll add it later if it’s too thick. Whisk for about 5 min until smooth, thick and creamy. Add all the veggies & chicken. Simmer on low until everything is heated through and veggies are all tender. Season with seasoning or salt/pepper. If the sauce is too thick, add a little more broth until it’s a consistency that you like. Break a biscuit in half, put it in a bowl, spoon the sauce over it and top with the other half of the biscuit. SO easy and yummy. You can easily throw this together within 30 minutes!

Wednesday: Sports night – so we’ll have leftovers from the chicken pot pie bowls!
Thursday: The Girl Who Ate Everything’s One Pan Creamy Chicken & Spinach. I’ll make it with tortellini.
Friday: Friday is almost always pizza night due to lots of sports!
Saturday: Out for dinner! Kitchen is closed.
Sunday: Pioneer Woman’s Sunday Stew! This is absolutely the BEST beef stew you will ever have. To make it more amazing, use tenderloin beef.
